Title says it all. Considering it is an Intel machine about how many more years till the 2019 model have till Apple decides not to have its OS support the machine?
 
Apple usually support a Mac for 7 years (allow it to install new macOS). So, most likely the new macOS support for the 7,1 will end at 2026. But since the 7,1 was actually introduced in Dec 2019, and new macOS release usually before Dec. Therefore, may be it can still install the macOS release in last 2026. Then another 1 year of OS update + 2 years security update. Most likely there will be no more support by the end of 2029.

I think you meant to say 2026.

That would kind of suck but you may well be right. It would suck as people buying it in 2023 would get less than 3 years of “real” updates. It’s the current machine and we might not get a replacement until summer or later.

Considering how expensive the machine is, I hope they give it at least 3 full OS updates past whenever they release the replacement Mac pro. So if they release the new Mac Pro this year, hopefully the Intel Mac gets supported through macOS 16. That feels pretty reasonable, but there is a chance support dries up with macOS 14, which would really piss a lot of people off.

It's hard to say. Support may or may not be as long as discontinued AS Macs which also have a set support expiration. My best guess it will have about the same support length as the M1 Mac Studio which also is expected to be discontinued this year.
 
Same expectation (Mac Pro last supported by MacOS-16 (late-2025), +1 year feature updates, +2 year security updates, final update in 2028) but different logic. Even when Apple wants to get rid of a product they've never excluded a product from new version of MacOS for models less than 3 years out from discontinuation (or less than 4 years from introduction, but the latter doesn't apply here).

The 2005 G5 Power Macs, discontinued 3rd-quarter 2006, were dropped from Snow Leopard (release 3rd-quarter 2009).
Similarly the 2013 Mac Pro, discontinued 4th-quarter 2019, was dropped from Ventura (release 4th-quarter 2022).

If Apple had managed to replace the Mac Pro on schedule in 2022 I would have expected intel support to have been dropped 2025, but with 8,1 delays and 7,1 sales/production continuing into 2023 I expect support for Intel models won't be dropped from the latest MacOS version until 2026.
