By taking into account that new MAC OS Sierra is already available in the MAC Appstore, I was just wondering what will happen if I still continue using El Capitan ? I mean I'm using mid2015 Macbook Pro and I can easily update my OS, but I don't find anything new there, I simply don't like Siri.
Thus will I still be getting security updates ? Will the default apps like Safari and Itunes be the same version as they're on MAC OS Sierra at the moment ? If yes, then for how long does an old OS being usually supported ?

Security updates are delivered until usually about three years after the OS has been released. So I'll assume OS X El Capitan will be supported until probably 2018. As for Safari, you will get updates to Safari a similar way; you will get updates for the last three released OSes, so once again until mid-2018. As for iTunes, the support will last even longer, as it is supported for another year, so count that 2019.

Of course, that's disregarding the actual support from the software developers, which typically lasts between 3-6 years depending on the software.
