I usually update iOS within a month of release, but curcumstances currently are keeping me from updating.

How long usually can you use an older iOS version before apps and Apple drop support?

What if I don't upgrade until iOS 12 is released, will I have issues upgrading 2 iOS version up?

No you'll be fine.

You can use iOS 10 until your current device is dead. Just keep installing tvOS profile to stop software update from running.
