I'm asking about the entry and the 20 core model. Just wondering if this device is already future proof is it can handle the footage

The media engine (that decodes and encodes video) and display engine (that handles display output) are separate units.

The M1 Ultra has two media engines, so you can stream twice the amount of videos on that. Apple mentions that you can stream 9 streams of 8K ProRes on the M1 Max and 18 streams of 8K ProRes on the M1 Ultra.

Since we don't know anything other than the resolution and nothing about the encoding quality of your video it is hard to say 🤷🏼‍♂️

Apple also specifically points out that its hardware media engine can handle HEVC, so you'll likely be pleasantly surprised, as long as you don't pick the M1 base SOC, as it doesn't have the media engine. All M2 SOCs have it, and the M2 Max has two, so it may be the M2 Ultra ends up with 4.
