If I restore an iPhone from an iCloud backup, how many previous backups will it show? How many backups does icloud retain? Is it a rolling number (drops the oldest of them)?

I just looked at my iCloud backups and I only have the most recent backup for each device. In iTunes, I have backups that go all the way back to iOS 11! I just deleted all in iTunes except the backups that are still signed by Apple as the others wont work anyway.
 
Only the most recent successful backup, which makes sense since it counts against your limited iCloud storage. Imagine the outcry if you would fill that measly 5 gigs of free iCloud storage in a matter of months just because you're backing your devices up with a Time Machine-esque mechanism. It would be so cool to have a) Time Machine in the cloud for iOS devices and b) not having it count against your iCloud storage.
