I am about to sell my mac to build a pc. Currently I have a Mac Pro (Mid 2010) model with a
3.2 GHz Quad-Core Intel Xeon processor, 32gb of ddr3 1066 Mhz RAM, a 1tb SSD, 2 10tb HDDs, and a
ATI Radeon HD 5770 1024 MB graphics card. How much would you say this is worth?

Hard to say as worth is in the eye of any potential purchaser. I would recommend checking the completed auctions on Ebay and browse asking prices on your local Craigs List forum. That should get you in the ball park.
 
Also take a look at how much they are selling for retail - then subtract 20-40% depending on condition.
 
You're probably better served by returning it to as close to stock as possible and then selling the SSD and the 2 10 GB drives separately. Quad-core 3.2 models sell on eBay in the $500-600 range; the 1 TB SSD and 2 10 GB HDs won't add nearly as much value as if you sell them separately.

For some reason a factory 5,1 (2010-2012) fetches a lot more on eBay than a 4,1 (2009) flashed.

I have picked up a 2010 QC 2.8, 8GB, (don't remember the HD size) for $300 on CL. but this I feel is a low price. I think the 500-600 for your factory spec on eBay is spot on.

Just remember to pack it really well! This thing is Heavy and the "handles" are weak if the box is dropped. Your best bet is to use original (or any G5 or cMP) box. If that's not available plenty of bubble wrap the unit, then put tight into a box, then bubble wrap that and put in tight into another box.
