After buying a new MB, how much time do you have to add AppleCare after the purchase?

^^ Yup, but sometimes it takes a few days after you activate your specific account so do allow for several business days (before your 1 year is up). :p

I'm thinking about getting a refurbed iBook for work. So what if the one I buy was originally sold over 12 months ago? Can I still buy the AppleCare?

In this case you have 12 months from your date of purchase (I think, you should probably check to be sure).
 
i wouldn't buy applecare, your better off buying some decent laptop insurance, that way if you accidentally drop it you'll get it replaced or get the money.
