If Apple were to re-launch “Apple TV+”, but this time it contained all of (or nearly all of) their Apple TV (Movie & TV) store library, what would you consider paying (monthly) for unlimited access?

I wouldn't, because the entire point of buying something from the iTunes store is owning it. Though at this point I prefer buying physical media.
At least I assume you're talking about the iTunes Movie & TV store. The other person thinks you are talking about TV+ content, none of which is even in the iTunes store nor has any of it been removed from the TV+ subscription catalog, as far as I'm aware.
