I'm finding blurbs that the HDMI even with the *firmware update*, on the late 2012 Mac Mini is still ~buggy~ via HDMI.

I was going to buy a Mac Mini and use it as my HTPC......but HDMI is crucial as that will be my primary output

I would strongly suggest you check out both the Plex and XBMC forums and ask there. They have forum threads dedicated to Mac and they are helpful, often brutal when things don't work (they don't pull punches so you know they want only the best they can get out of their systems).
 
My 2012 2.6GHz mini is fine as a HTPC using HDMI on a Sony Bravia. Never had any problems.
 
Sometimes I lose audio over hdmi. A restart fixed this but it's quite annoying and frustrating. Any ideas on how to fix this?
 
My mac mini runs 2 screens, 1 HDMI and 2 HDMI via thunderbolt connector, both are 100% flawless.
 
Not sure about audio - but the video works great on mine since that update late last year.

Update: Actually yeah, nvm, I had a brain fart. The audio works well too - I've hooked it to my TV on several occasions.
