I'm at a hotel and need to connect to faster internet. Only way to make the network forget me, it seems, is to change my MAC address. Cannot for the life of me figure out how to do this. Hotel itself is a lost cause (otherwise they could forget me on their end). Can this be done on Big Sur? Any risks in doing so?

Yes, the suggestion above works on BigSur.
No, generally, there are no risks whatsoever, UNLESS your ISP has something to say. Meaning, sometimes, ISPs gives Internet connection to machines based on MAC address, not IP address. If that's the case, you will not have Internet with a new MAC address.
Otherwise, it's all fine.

Keep getting errors changing the MAC address. Its like they disabled support for Monterey.
