I need to record screencast HD 1920x1080 videos but I can't find a way to set the builtin laptop monitor resolution to those dimensions. It can be done on an Intel MacBook 16" 2019 using software such as SwitchResX or EasyRes. However those software do not list a 1920x1080 resolution on the M1 silicon version. They have 1920x1200 but not 1080. I wonder why...

It could be because the m1 16 inch laptop does not have a 16:9 screen, so you don't get perfect 16:9 resolutions to choose from. The 16 inch screen is closer to 14:9 or 15.5:10 aspect ratio.

1. To get additional resolutions without SwitchResX or EasyRes, follow steps:
System Preferences > Displays > Display Settings > hold option key and click "Scaled"

2. Don't record the whole screen. Instead, just record a 1080p portion of it.

3. Do a screen recording at any resolution, and use handbrake to crop and convert to 1080p afterwards. I suggest starting with a shorter recording first to make sure it works.

4. Connect to an external 1080p display and record from there

Thanks for the suggestions. Eventually, I used EasyRes to set the resolution to 1980x1200 and then record only a 1980x1080 area from that leaving out the Dock.
Thanks again!
