How to change "No Sim" carrier string without JB?

I decided recently to setup my old first gen iPhone as an iPod Touch for my fiance. Is there a way to change the "No Sim" carrier string tp something else without having to jailbreak? I used Caption Crunch on my 3g to do this with the AT&T string, but it doesn't seem to work for "No Sim" because its a different string variable or something.
