How to change the "Mail" and "App Store" icon?

I have changed the Mail and AppStore Icon along time ago and now I want to change them, But I can't really remember how I changed it, It seems you usually change the Icon.png file but when I change that file nothing happens..?

Could anyone point me in the right direction to which two files to change?
