Both my wife and I have iPads and iPhones running ios9, and both of course have Notes, as well as Pages. We also use family sharing. So, how do I make a document and both have the ability to edit and collaborate on it?

Here's the thing. Apple isn't that good with productivity. The king of collaborative documents as of now is Google with google docs. That said, it is possible to collaborate, but you both have to use the web version of pages on iCloud.com.

Web only, weird. Very un-Apple like. That should be a feature they add at some point. I guess for this one document, Google it is.

Wife and I use Evernote or Google Docs. We used to use OneNote but she never really adapted to it.
Another option is a common Dropbox account.

You would think, especially there would be better options in iOS as standard functionality.
Sadly... :(

Reminders has sharing, perhaps soon, notes will as well. Then again, it is probably the calendar team that is doing sharing the notes team is doing their own thing like allowing you to draw on notes.

As much as I like Apple, for cross platform reliance and actual productivity, I use Google Drive and apps for most things. Granted that is all in a browser as well.
