How to control audio on AirPods Pro?

I understand that I can customize the two earpieces for noise cancellation and whatnot. But what about skip forward, pause and play? In older AirPods I can set those on each earpiece, but for the Pro it seems all the settings are only for noise cancellation and Siri.

Double press: skip ahead / next track
Triple press: skip back / previous track

Tell Siri to turn down or up, or manually use your phone or watch to adjust.

The APP do not have physical volume controls. Though I am amazed at how easily I have switched to using Siri.
