I use my Mac running Monterey strictly for work and would like to disable automatic bookmark syncing on my iPhone and iPad. Is this somehow possible ? I know it is opposite of what most people use and I was looking into safari settings but couldn't find anything that would do the job.

Have you tried Settings App > Apple ID (top right corner) > iCloud (left pane) > uncheck Safari (right pane) ?

I haven't done this, but you could leave your iPhone and iPad connected to iCloud and remove the Mac Safari. That should allow you to keep your work separate from iCloud.
