I am using the Big Sur version of the Home app. I believe, the interface hasn’t changed too much from the Catalina version, although it is sufficiently different from the one that shipped with Mojave.

I am looking for a way to edit the names of my rooms. So far I have had to switch to using the Home app on my phone or iPad, in order to accomplish that. Also, I would like to get rid of some of the suggested room names. How do I do that? All of the ones I would like to delete have no accessories in them, but what would happen, if they did while I deleted that room?

I have not seen any online explanation for these tasks that use the Catalina or Big Sur version of the Home app.

You should be able to edit room names on any of the platforms.

For example, when you are in the Home app on your Mac, any of the rooms selected will have a drop-down menu just at the top on the menu bar and next to the room name. Open up 'Room Settings' and it will give you a field to change the Room Name to whatever you want. The same Settings gives you the option to delete the room.

Here I found that I could edit the room name, the background for the room, and even remove it altogether. I did not test to see, what would happen, if I tried to remove a room with accessories inside.

At any rate, what fascinates me now is that the background for the room can be a photo. I will go around the house tomorrow and take pictures of those rooms with the wide-angle lens of my new iPhone 12 Pro and use those images as background images. Cool!

I used to use pictures of the rooms as the background but gets a little busy. Instead what I do is take a close picture of the paint color of the room and use that as the background. Nice solid clean easy to see color.

I am running the latest version of iOS. However, I do not have the option to delete a room. Everything else looks the same as what I saw Bob, but I cannot delete a room that was erroneously added.
