I wanted to edit the text on the sliders for powering off and unlocking without using Winterboard. Googling yielded mixed results. I Don't have wifi so openssh was out. I needed something that would work through USB. This is how I did it with my Mac I am sure there are similar programs for PCs. Here is the method that worked for me.
1. Download Diskaid here: http://www.digidna.net/products/diskaid
and TextWrangler here: http://www.barebones.com/products/TextWrangler/
2. Plug in your device.
3. Open DiskAid. It should auto detect the device. It lists on the bottom of the DiskAid window.
*WARNING: IF YOU ARE NOT CAREFUL IN THIS NEXT STEP YOU MAY CHANGE/DAMAGE CRITICAL FILES ON YOUR DEVICE. I ASSUME NO RESPONSIBILITY FOR ANY DEVIATION FROM THIS GUIDE*
4. In the lower left choose Root Folder from the drop down.
5. Navigate to System>Library>CoreServices>SpringBoard.app>English.Iproj>SpringBoard.Strings
6. Copy this file to your Mac. Save an original just in case then copy again from DiskAid to edit. I put one in a folder and then one to edit on the desktop to make things easier.
7. Open TextWrangler and open the SpringBoard.string file you are going to edit.
8. Once open I found it easiest to go to Search>Find and enter the text you want to edit i.e. "slide to Unlock" or "slide to power off". This will take you to the actual text you will edit. You should find this: <string>slide to unlock</string>
9. Delete the text between <string></string> and enter your new text. Keep in mind that there is only a certain amount of characters allowed. I got a malformed error message because the text was too long. This step takes trial and error. You can find nearly any text in here that you want to edit. The same method will apply to most.
10. Once you have finished your editing. Go to File>Save and you can go back to DiskAid.
11. Delete the SpringBoard.string file from the device.
12. Click Copy to Device then browse to your edited file and open.
13. Once that is done you can just respring to allow the changes to take place.
That is all there is to it.
