Have tried a few Safari Extensions but can't enable any of them. Shouldn't the box CHECK to enable? I can't get it to work and can't find a way to enable. Is there a "Switch" that I need check to allow checking/enabling of an Extension?
Just using as an example and have tried many. Here I'm trying another that you can approve of and same problem. You’re right. Normally you’d just check the box. Fortunately for you in this case, Safari is doing you a huge favor. Stay far away from so-called anti-virus add on. You put yourself at risk for nothing. Here is just one article explaining why, but even the extension pane you posted explains the risks. That extension can watch everything you do on every webpage, including your password, phone numbers, and credit cards!
OK then how do I check for Permissions for this?It should just accept a checkmark. I have no idea why it wouldn't. Permissions problem?

As I stated (and show pics) I have installed multiple Extensions and tried to check them. Clicking the box doesn't do ANYTHING. I have also rebooted multiple times too. What actually happens for you when you try clicking the checkbox? Does it just do nothing? It doesn't look greyed out like if you dint's have permission to check it or something. You should be able to just check it.
Updates to the extensions may uncheck them and require being re-checked but yeah.
https://forums.macrumors.com/threads/cant-turn-extensions-on-in-safari-on-macos-10-15-3.2223665/can you go to Safari > Preferences > Extensions, then navigate to a different pane (e.g., Advanced), and then back to Extensions? With any luck, your checkboxes might be enable-able now
Thanks, guess it is a bug some people are stuck with. Lucky me.
