Hi when I search for let’s say a restaurant in safari app and I click on directions it opens up in Google maps. How do I get it to open up in Apple maps? Thanks!

The link is probably pointing directly to google maps.

Here's two examples:

https://www.kittysrestaurant.com/contact.html has a link to https://goo.gl/maps/xHzLP
https://www.legalseafoods.com/locations/boston-copley-place/ has link to https://goo.gl/maps/wVNsncoAszmuRchu5

This actually makes sense. Google maps works everywhere - Apple Maps doesn't work on Android or Windows.

There's a Safari extension that should do this

search for 'Mapper for Safari' in the app store

Google will have coded the link to go directly to Google Maps and not take you to the default map app. Clever of them perhaps to not put the actual address there, where you could highlight it and link from there to Maps.
