OK -- I have looked all over and can't find a definitive answer to this question. If I buy an HDR movie from iTunes, I know that I can stream it down directly from Apple and play it in HDR on my iPhone X and my iPad Pro 2017.

But suppose I want to DOWNLOAD the movie in HDR format onto my devices, so that I don't have to stream them anymore? I know that I can do this directly from Apple -- my question is, can I *also* do this via iTunes on my Mac? If I download the movie to my Mac (using iTunes) and then sync the movie via Lightning cable to my iPhone X or iPad Pro 2017, will that synced copy of the movie be HDR?
 
You can download at 1080p and stream at 4K. I don’t believe the 1080p version has HDR.
 
There needs to be a definitive document about this, because it doesn't make sense that I can stream with HDR but NOT download the HDR version directly to the device. I know that 4K is definitely streaming-only, but the implication has been that HDR is not.
 
1080P is standard HD (Rec.709) video format (aka: S[tandard]DR) and CAN'T support HDR/HDR10/Dolby Vision (not just Apple but all 1080p). So you MUST use the 4K version to get HDR.

You can download a local copy of an HD movie to your iPhone, iPad, iPod touch, Mac, or PC, and you might be able to download HDR and Dolby Vision versions to your iOS devices, but you can't download a 4K version.

Probably a typo since AGIAN 1080p can't contain HDR extensions. 1080p is Rec.709 and is only 8 bit (do the math ;)). HDR REQUIRES color space DCI-P3 or Rec. 2020 and a minimum of 10 bit (or 12 bit) resolution.
