I just took out the DVD player and installed a SSD in the optical bay.

Now I would like to install leopard in the new SSD. with out the optical drive I don't know how to do it.( I have the disc, I have another Mac Pro and extrnal drives and fire wire cable)

How can I do this?

Start the other MP with the optical disk drive (ODD) and the Leopard DVD inside that into Target Disk Mode and connect it to the MP without an ODD and when booting that MP hold down the OPTION key to select the externally connected ODD.

...or just put the ssd in a normal HDD slot while installing? with some quick DIY stuff

remember you need a copy of 10.5.7 (atleast I believe that was it) of Leopard if you wanna install on a 2009 MP, since it has hardware that Leopard 10.5.0 didnt ship drivers for.

Thanks !!! I just downloaded OS lion and it works perfectly :)
