Hello, I currently use Mojave, and finally decided to make the switch to a new OS. I was planning on upgrading to Monterey, and just spent a few days backing up everything, only to find out that now Ventura has replaced it on the App Store. How do I upgrade to Monterey, now that the only option on the App Store seems to be Ventura?

You can still get Monterey through the App Store, if that's what you want.
Look for the link to the Monterey download, which takes you to the App Store for the download.
That article has links to download most macOS and OS X systems back to Lion.
Use your Monterey download to make a bootable USB installer. Then, you will have the installer quickly, if you need to use it in the future.
