I recently purchased a Jailbroken/Unlocked iPhone from someone using it for AT&T. There are lots and lots of apps on the phone, and Im afraid if I sync with my computer, it will erase all of the apps. Is there a way to preserve them at all?

Yeah... you're really not going to get any help here regarding this issue of yours. You're just going to want to buy the apps if you want them.

If you're looking to save your jb apps check out pkgbackup in cydia. It's $3.50 but well worth it. It also stated that it will save your springboard setup now. Hope this helps.
