Following what seems like quite a few issues reported with those who have updated today I am a little nervous and would rather wait until the dust settles.

I have preferences in iTunes set to not automatically sync my iPod Touch and check for new updates automatically is un-ticked. Does this mean I can stick with the old iTunes and OS?

Yes. It will ask one time to update to iTunes 10.5.0.1X and if you click cancel and don't ask again it will cease.

OK, thank you. Judging by the huge number of issues reported since I last visited here 8 hours ago I'm sticking with the (works perfectly) old software for now!
