17,1 iMac, 10.12.6, iPad Pro ios11, I have several videos on my iMac, iTunes is set to share its library in 10.12.6.

Why can’t my iPad Pro see and play my videos on the iMac. It has no trouble seeing iTunes movies, but not videos I store on my iMac. Why?

You need to sync your iPad with iTunes.
Connect your iPad the Mac using the lightning cable, if the iPad does not pop-up on its own, click the iPad symbol in the top left corner (right side of the content menu, Music, Videos etc.)
Choose videos (Or Movies I think) in the left pane. Enable synchronizing here.

If you wish to do this wirelessly in the future, just check the checkbox "Synchronize with this iPad via Wi-Fi" in the Resumé pane. It is in the group "Settings" (Or Preferences), I am not sure on the right translation from my native language.

Nope, it's synced. I backup/sync the iPad Pro and my iPhone all the time. iTunes Home sharing is turned ON. Nothing on the iPad Pro will STREAM home videos from my iMac, unless I sync/load the entire movie on the iPad Pro. I can STREAM any iTunes purchased movie from the iPad Pro, I CANNOT STREAM any home movie I RIP and store in iTunes12, unless I play the Home Movie on the iMac. Apple has removed STREAMING home movies function from Apple TV in iOS11. The old Apple Video app has been replaced by this Apple TV app that will not STREAM home movies from iTunes 10.12.6.

Does anyone use a third party app to STREAM home movies in iOS11 from their iMac?
