Since there no "restore, setup as new, re-jailbreak" anymore, how do you go about preparing the phone for sale like getting rid of all apps, contacts, messages, emails, etc.?
 
Hook it up to your computer and restore and set up as new. Best way to remove everything. If you wanted to keep it jailbroken to sell I know there is a cydia tweak that removed all jailbreak stuff installed but I don't remember what it's called. I don't think it does any personal information so you would have to do all of that manually.

Personally I don't think its worth the effort, I would just restore it as new and lose the jailbreak and sell it. You shouldn't have a problem selling it unless it's a POS.
 
I suspect the thread starter wanted to keep the existing firmware so he could offer the phone as "can be jailbroken".

There is a fairly new Cydia hack called ILEX Rat that is supposedly able to remove all Cydia tweaks in one operation.
 
iFaith helps saving the shsh blobs of current version in idevice.
After saving, verify your blobs , build the firmware with these blobs
and you are ready to restore to same firmware.

Only for the A4 devices and the 3GS.

For the 4S and the IP5 it does not work.
