I have been wanting to set this up for years and really can't find a good guide on how to do it on macOS.
I see some guides for Windows using a VPN service and I see some things on paying a service like PaperCut and that's not what I want to do.

It seems I should be able to print over the internet from mobile devices: laptops, ipads, iphones.

I have a ddns service already with a domain name.

When I go into printers i see VNC Remote Printer but that doesn't work for iOS devices

I used to remote print to my home (east coast) from England when I traveled for my work. I’d set it up with HP for my laser printer. I think it was $69/yr but maybe it’s more now. Of course your printer must be on and connected to WiFi.

Cool... not really what I am looking for. In this case static ethernet IP address would be recommended.

I found a bread crumb and now I am onto the scent... but just barely

enable CUPS in Terminal

Code:
cupsctl WebInterface=yes

once enabled you can access CUPS web interface at:

http://localhost:631

If I go into Administration there is an option to "Allow Printing from the Internet"
