Hello. I have a 2011 Macbook Pro A1278 that was running a dosdude patched version of macOS Mojave. I wanted to upgrade to macOS 11 big sur, so I went ahead and installed OpenCore legacy patcher and upgraded the OS. This resulted in a kernel panic after installing video drivers. I then backed up the entire hard drive, wiped the internal, and performed a clean installation. I then migrated the data from the back up. This again resulted in a kernel panic loading video drivers.

It seems that once all the dosdude patches are installed, they are permanent, and are migrated over from the backup of the system. How do I go about removing all the patches from the system? Where are they located?

For OCLP, you need to start with a clean install of a supported version of macOS. Then you use OCLP to install unsupported macOS.
