Hello,

I would like to remove eSIM plan called "Used as 'Personal'".

How can I do it?

I do not see any option.

I meant you have your phone numbers exposed in the screenshot you posted here. I see you have removed the picture.

I am not sure how you remove that number since there is no SIM installed. You might try Apple Support
 
eSIMs are removed in Settings > Cellular. Select the eSIM, scroll down and tap on "Delete eSIM".
