It is magnetically attached. Assuming you're looking at the heatsink cover when the MP is standing in upright position, feel with your fingers for lip near the top-back side of the heatsink cover. You then lift the cover outward.
 
I have really tried but can't figure it out. Is it possible that my model is different, and that the cover is not magnetically attached like you say and like they show in the OWC video.

When I feel the top back of the cover, I can't feel any 'lip' (English is not my native language so I'm not exactly sure what you mean). The curved cover is completely smooth and there is no place to get a grip to lift it.

However, I forced a screwdriver in on the right side of the top part, and after some heavy yanking, the cover loosened on the right side. As shown in the attached picture, you can clearly see that a plastic flap was inserted horizontally into a metal 'hole' in the cover itself. This was stopping me from lifting the cover straight up, and the cover had to be yanked to the left to get it out. But as there is really no room to move the cover left or right, it was very hard and I almost broke the plastic flap. Now the cover will not close, because the flap is stopping it, and I can not lift the left side because there is probably a similar flap there. And the cover would have to be moved to he right to unhinge the left flap. But there is no room to move it to the right (or left).

Any other ideas?

P.S. I have built many PCs as well as opened iPods and Mac laptops to change hard drives and optical drives etc. So I'm not entirely clueless about these things. Something does not seem to be right here. The cover is definitely not coming off easily.

The OWC is different. I just removed the cover the other day. You have to loosen the ram housing screws. Be carefull not to strip the ones on the very front. Then move the ram housing to the right. This will allow all the tabs on the cover to release. They are not magnetically held. The fan assembly is only one screw. Then pull on the assembly from the lower left corner.

^^^Exactly like this. It isn't very hard, only for the first time :)
BTW, it cannot be magnetically held, because it's all aluminum (and foam) and there's no magnet attached to it.

Thank you for that information! Could you please tell me where the ram housing screws are located and how many there are? I'm currently working on the Mac Pro and can not check inside until this evening. It would be great to be fully prepared to do a successful removal by then!

Sure. Remove the two ram slots and you'll see the four screws.

I thought about upgrading the CPUs but it would be cheaper to trade up.

With the help of the pictures I finally managed to remove the processor heat sink cover. I have now connected a second SSD which is housed in the ODD. I was surprised though that I couldn't find a hole from the ODD compartment to the motherboard area for the SATA cable. I had to go over the HD trays.

OWC Mercury Electra feels snappier than my older Intel X-25M.

Mine has a pass through with all the current cables with enough clearance to fit your own.
