Hello!
I'm searching for a program/way to see (like in a log file for instance) all action Finder does on my mac. I mean, for example, a way to see all files created during an installation of a .pkg, and the directories where they are stored.

Any way to do this?

AppDelete is a good Mac application. Select any application and it will reveal all associated files and directories. You can then archive, delete or simply exit the app.

This one logs every file change that happens on your computer, and is free! Click the menu bar icon to see what's changing, when it's red it means something is happening.
