Long story short, a friend lost the phonebook off his iPhone, I found an old backup on their computer and could retrieve the phonebook, now since he doesn't want to use iCloud to synch it all (don't ask me why) is there a way to copy the phonebook off of BigSur to iPhone running iOS (dunno if 14 or 15 but my guess is 14)?

Yes plug in your phone and look for it in the finder sidebar. You can manage syncing from there.
 
You would need to use either iTunes on PC or Finder on Big Sur or Monterey to sync contacts. Alternatively, third party programs like iMazing could manage contacts too, assuming the backup is readable by those programs.
 
I imported the single Vcards from a backup onto the BigSur address book, I will try with the finder, I don't know if new releases of iTunes still allow the synching.

Big Sur only supports finder syncing (and maybe third party applications as well). iTunes is no longer supported.

I cheked on my MBAir running BigSur and iPhone running iOS 14 and in the finder the option didn't appear since I synch it all through iCloud but I guess it would show if the cloud option is not in use.

One more question, since there is already a phonebook on the iPhone and the big but old one on the computer will the option of synching off the finder merge the two?

I have found that sometimes the iPhone won't show up automatically in Finder, even when iPhone is hardwire connected to Mac. This usually fixed here by clicking Finder > Preferences, unchecking 'CDs, DVDs and iOS Devices' and then checking it back on again.

I have no idea how that works since I use iCloud most often. However my iPhone does show up contacts and information tab on finder even though iCloud is on.
 
I thought I might retrieve the contacts off the iPhone from a backup which I can make through the computer it is connected to, then export the vcards, import them onto the computer's address book and then figure how to synch it all to the iPhone
