I didn't do it this year, but I remember people were having issues with trading their iPhone in at the apple store on the day they picked up their phone if they originally selected the option to return the old phone via mail. The apple store was unable to process a trade in if there was a mail trade in, in progress. Is that correct? I remember some people were able to get around this by preordering the new phone for pickup at the store, not choosing a trade in option - then asking to trade in when they came to the store, back to the credit card they ordered the new phone on - is that correct? Just curious about next year.

The best way is to order for pick-up without trade-in option, pick up your phone, and then you’ll have 14 days to trade-in your old phone. Just did it myself - bought 11 Pro Max and traded in my old X a week later. They will need your receipt or a serial number for your new phone, but it was very quick and painless.
