My search skills are seriously lacking here, as I cant find a guide to do what I want.

I currently have a windows 7 pc and an iphone 3g plus ipod touch which sync via the windows 7 pc.

I have a 27" imac arriving on tuesday and want to transfer the itunes library from the windows machine to the new imac.

What is the easiest way to achieve this?

You have iTunes folder in your PC which has all the files you need, including music, apps, album art etc. Just copy that and paste it to /User/Music/iTunes

If its that simple thanks, I assumed the file formats would be different.

What about File>Add to Library in the Mac iTunes and point to the old library... Would that work for you... that is how I did it but that was about 4 years ago...

That's what I did as well when I transferred over the XML file but it didn't save my ratings or play count. It has in the past as I've done this before from desktop to laptop but alas..it's not a big deal though..because I still have my playlists!
 
with the new itunes u dont need to edit anything. just make sure your itunes library is organized & consolidated. copy to external hardrive & transfer anywhere you want on you new mac. hold "option" when starting itunes & choose the itunes library u just transfered.
i just done this a couple of weeks ago, from pc to my new mac.

Did this method transfer over your iphone backups too?

I would like to add that just yesterday I transferred my iTunes library from my PC to my iMac using the Lifehacker guide that I posted earlier in this thread. I successfully transferred all of my Music, Movies, TV Shows, Podcasts, Apps, Ringtones, playlists, and playcounts.

I had to re-sync my iPhone and iPod, but that only took a second to click the playlists and apps I wanted on the devices. Who cares about backups if nothing is going wrong with your phone?

Easy as pie.
