I know that you can remove individual Hyperlinks, but I really don’t want to EVER have any Hyperlinks in my notes.

I don’t want email addresses to be automatic mailto: links or a series of words or characters separated by periods to automatically be a clickable URL.

Currently, I type email addresses as ‘name dot name at domain dot com‘, and websites as ‘something dot domain dot com’.

Any solutions? Including other ‘notes’ type apps that have such functionality?

They can’t be disabled in ios Notes. Typical  software.
Gotta try some other note software. I don’t have a suggestion

I know it isn't the best solution you are seeking but, once you create a note and Notes turns something into a link, go to edit > subsitutions > uncheck Smart Links. That will remove all links in the note.
