I have an iPhone 2G that I got in August. I jailbroke it so that I could use the phone without having to get a data plan. I now think I would like to get a data plan, which means I now have no reason to keep it as a jailbroken phone. It will be nice to not have a few extra steps every time a new version of iPhone software is released.

How can I un-jailbreak my phone and
  • Retain my application settings?
  • Retain my SMS messages?

To un-jailbreak, click restore.

If you restore from a backup, you can keep the above 2 items, however it is not recommended as restoring from a backup is the exact way most people have issues with their systems after restoring. Sorry for the run-on
 
If I did not have any non-app store apps or themes, or modify the phone in any way other than having the jailbreak software on there (to not need a data plan), would that lessen the chances of having an issue after restoring?

It might. You can always try it and see if it works, and then restore and set up as new if you have a problem.
