How to Undo something without shaking?

is there a device wide way to undo something other then having to shake the device?

You can set up a "Shake" icon/button with Settings>General>Accessibility>AssistiveTouch if you don't mind having AssistiveTouch on all the time. While you're checking out AT there are several other buttons you can configure. It's very much like a jailbreak tweak.

It would be nice to be able to switch the Reachability function to something like "Undo".

If you turn your phone into landscape mode, you will get an undo button on the keyboard.

This will only work on text fields though.
