how to uninstall iTunes so I can reinstall iTunes?

There really is no process to uninstall/reinstall iTunes.
I guess you can try to trash the app, search and delete anything in ~/Library and ~/Music and then use Pacifist to pull out the App from OS X installer.
I recommend a full backup in case it doesn't work.

You can delete the app (via the Terminal), then download and install a fresh copy :

Warning : you can delete iTunes preferences files in ~/Library, but do NOT delete the iTunes folder in ~/Music : it holds your iTunes Library !
