How to unlock an iphone 2.0?

I am an ATT customer, but I don't want to pay for the ridiculous Iphone plan. I like the 3G, but don't really need the GPS or 3G. However, I would really love activesync to get all my contacts. If I buy an unlocked 1.1.4 iphone, can I upgrade to 2.0 and then unlock again and still use activesync, edge, etc? thanks!
