iPhone How to Unlock iPhone 5 without restoring and without SIM card

Is this possible? I have a jailbroken AT&T iPhone 5 on iOS 6. I am going to Iceland for holiday and have already gotten my IMEI unlocked. I want to make sure I unlock it before I travel. Any suggestions?

EDIT: I plan on buying a SIM card in Iceland when I arrive.

Would it have to be a SIM card on another network? Or could I use a friends AT&T sim (I think I already know the answer)

The easiest way to check if your iPhone 5 is unlocked is to put in a SIM card that is not AT&T (like a T-Mobile sim card)

And then hook it up to iTunes so the unlock can attach.
