I just purchased this system:

iMac, 24-inch, Intel Core 2 Duo
NVIDIA GeForce 7600 GT 256MB SDRAM
250GB Serial ATA Drive
2GB 667 DDR2 SDRAM - 2x1GB
2.33GHz Intel Core 2 Duo
SuperDrive 8X (DVD+R DL/DVD-RW/CD-RW)

I didn't buy it for games obviously but I do like The Sims and would like to know how the 2nd one would play on this system.

I would imagine that it would play on that system with no problems at all. Just make sure you download the latest patch, which makes the game a Universal Binary so it'll run better on your Intel-equipped machine.

Would it be fast? (Sorry, I'm really a newbie when it comes to gaming...PERIOD!)
 
I've not played it on the computer set up you're describing, so I can't say yes with absolute certainty. ;) But what I can say is that I've played it on my G5, with less RAM and an inferior video card to your Mac and it ran perfectly. I don't see any reason at all why it shouldn't run nice and fast for you.
 
Yeah I've toyed around with the Sims 2 on my last-gen iMac G5 and I've got no complaints about it at all. Ran great, so your computer should run it no sweat.
