you'll download Lion and install.
if you need to you'd then transfer to a usb, optical media or external drive for your backup
possibly Apple will offer a hard copy but somehow I doubt it, unless it's sd card or similar

So, if its an electronic install, would that mean that Apple would remember me buying Lion on my Apple account, in case I needed to format/install again? In that case id have to install Snow Leopard from my USB restore drive, then redownload the Lion update from the app store? Do I have that right?
The usb stick we got with our airs is writeable, perhaps we can get a code to flash that drive with new media. Then we dont have to fumble around with a bunch of flash drives. Apple will make it easy though, last thing they want is the apple stores flooded with Mac Air people trying to upgrade their machines.
