How would I hook two DVI/VGA monitors to the Mac mini?

I have two monitors. Each has both DVI and VGA. What cables would i need to connect them both to the macmini? (it has hdmi and thunderbolt outputs)

Can i "mix and match" - like have one going to the vga and the other going to the vga?

Can i "funnel thru" a monitor , like go from the minimac to the DVI input on monitor 1 and then use the open vga from that monitor 1 and connect to to the VGA of the other monitor? Kind of like a midi thru connector? I don't think this would work but figured I would throw it out there.

The mini has two video outputs. One is HDMI and one is Thunderbolt/Mini DisplayPort.
The mini ships with an HDMI to DVI adaptor. You can buy a Mini DisplayPort to DVI adaptor from the Apple Store (or elsewhere).
I have two DVI monitors, and they run fine, with the two "to DVI" adaptors.

No, you can't take a video signal "thru" a monitor, unless it's a Thunderbolt Display.

I wouldn't use the VGA connectors. Like the previous poster stated, use the supplied HDMI to DVI adapter, and purchase a Mini DisplayPort to DVI adapter for the second monitor.

I have just bought a Dell U2412M which has Display Port. I was thinking about connecting the Mac mini to the Dell monitor with a MDP-DP cable and using the HDMI-DVI adapter for the other monitor (19' bad quality). Is it a good setting?

Dell now has at least one display (the 29") with a "DisplayPort out" pass-through.

Theoretically, one could "daisy chain" a second monitor using a DisplayPort connection cable.

How this would be supported at the "Mac end" (via MiniDisplayPort), I'm not sure.
