Why would you want it as a boot drive? It would add lots of headaches, and barely boot faster than your EVO.

Booting involves lots of small reads to lots of files scattered across the disk. Once you move to *any* SSD and eliminate head motion and seek latencies, you've gained most of the benefit. Using crazy high bandwidth SSDs for boot drives is only a marginal improvement over eliminating the seek latencies.

Look at boot times, not some fancy GUI app showing sequential bandwidth.

I've come across a few for sale quite cheap (brand new).

My other option is to upgrade my 250GB SSD (Currently with El Capitan and Sierra) to a 480/500GB which can hold partitions for those and for Windows 7, freeing up one of my HDD bays.

Short answer, no.

Longer answer, no - because the Mac Pro 3,1 does not support NVMe but only AHCI drives.

Your best bet is simply to find a SSUBX (or equivalent) Apple SM951 drive in the wild.

No, and totally agree that there is almost no benefit to use it as boot drive but only problems.
