You can prevent TextEdit from saving formatting information by choosing Format > Make Plain Text.
As for another text editor, I'd recommend SubEthaEdit for writing html, which has useful features such as syntax highlighting and is free for non-commercial use.

SubEthaEdit is good too. It can handle lots of different programming code. Look for it on versiontracker.com

I personally do not like SubEthaEdit. It's a collaborative editor, where you share your works with your group. It's great and very helpful to groups. It's a godsend for them. I don't need this. I'm in no group. The problem? It stuffs that feature in your face. It makes it too complicated and confusing for those "indepentant" writers/coders. 
Textwrangler, on the other hand, is very powerful and advanced for those who need it, but it doesn't "stuff it in your face". It works very nicely as a simple beginner text editor. Try it out, it's free!

I disagree, the collaborative features in SubEthaEdit are isolated to a few menu and toolbar items if you don't use them (and the toolbar can be customised to remove these). Having used both SubEthaEdit and TextWrangler, I find SubEthaEdit much simpler to use, more light-weight and more powerful for editing html (although TextWrangler shines in other areas). Features such as a built in web preview can also save a lot of time.
cam50626, I'd recommend that you try both so that you can come up with your own conclusion based on your requirements.

Really though, I like TextWrangler and SubEthaEdit but for simple plain text editing, I often just use TextEdit. Open preferences and set the format for new documents to "plain text" and you won't have any of that "formatting stuff". Works fine for HTML.
