Once I add a smart stack and go edit, I can delete and reorder apps but I can not replace them with the apps I want. How do I do this?
 
I don’t think you can? I had the same problem anyway. I had to delete the stack and create a new one.

Seems stupid to me, but that’s Apple for you.
 
So there is no way to create a stack and only put the apps that I want in it?
 
You can do that for apps that support widgets. I created a Smart Stack and added Fantastical and a few other third party apps. All you have to do is drag the widget you want to add over the current stack and drop it in. Afterward, you can re-order the stack.

You can create your own. Instead of using the default stack, you can stack your own choices and there’s an option for smart rotation in the settings.
