I've purchased this GPU card last April, I think because of that I cannot use any boot key combinations. I've tried putting back my old GPU and it's still not working. I reinstalled Mojave as well...still no luck. Besides I want to installa Catalina Patcher, I cannot afford not have these boot key combinations not working. Please help!!

No. I am using a wired apple keyboard, the long one with numeric keypad.

Sorry, that is a touch contradictory.

If you are using a "wired apple keyboard" that is a USB keyboard. So to confirm, you're using a wired apple keyboard.

Have you tried plugging that keyboard into another USB port, or another USB keyboard, just to make sure there isn't something weird with the port or the keyboard? Does that keyboard work fine when you do boot? Just trying to make sure it's not a keyboard/port issue.

PC/unflashed GPUs do not provide pre-boot configuration support with a Mac Pro. If your GPUs are not AppleOEM/MacEdition or third party flashed you won't have any pre-boot configuration support.

If you know your way with console tools and flashing GPUs you can try to flash your RX 580 with EnableGop, only works if your GPU is not a mining one - any GPU firmware modification will not allow EnableGop to work. If it's not for you, you can get a BootROM reconstruction service for your Mac Pro and get the EnableGop already injected to the Mac Pro BootROM.

Thank you for your post! I've purchased my Radeon RX580 flashed by MacVidCards/Europe, I do have boot screen. I'm having Macs since 1995 but I am no expert. Do you know how much a BootROM reconstruction cost, roughly?
The only thing I want to do, anyway, is to get Catalina on my Mac...can I switch my GPU for another one, a Sapphire GTX 780 Ti, only to install the patcher and come back to my Radeon? Will it work?

Boot screen is a widely used incorrect term that in reality says nothing, a PC unflashed GPU from the box that have macOS drivers when installed in a Mac Pro still have a partial boot screen.

Let's make it easier, do you have access to the Boot Picker? It's the Boot Picker that you are trying to get it working and not being successful when you say that the keys do not work? Which keys at boot did you tried?

Do you have any SATA PCIe card? Some SATA PCIe cards like the very common Tempo and several clones that have the same Marvell 88SE9182 SATA controller when installed to a Mac Pro make the MacPro5,1 firmware to fail to show the BootPicker. There are other PCIe cards with incorrectly programmed OROMs that make the same, people have been reporting about this over the years.

I'm having Macs since 1995 but I am no expert. Do you know how much a BootROM reconstruction cost, roughly?

When installing unsupported macOS releases, you should avoid changing GPUs after install, there are loads of configurations that are GPU related and when you change the GPU this modifications need to be re-done for macOS to work correctly. People usually fail in this step, so, do your best to avoid changing the GPU.

Yes, it's the Boot Picker what I'm trying to get it to work. I've tried cmd-R, cmd-option-P-R, option, shift.
Unfortunately, I don't have any SATA PCIe card.
Thank you so much for taking the time and explaining all this to me. I really do appreciate it! I didn't know about the change of GPU card affecting these unsupported MacOS releases either...!!
Also, thank you for the price of the BootROM reconstruction!

I have my Mac Pro to make music, I have some new software that is for MacOS 10.15 or higher. That's why I wanted to update my Mac Pro. But I don't have the energy to take such great care of my computer, when it gets this technical. I guess I'll use my MacBook Pro that supports Catalina and make a network between them and that's it. But, if I do that, it still concerns me not being able to have any Boot Picker working though.

The keyboard that you are using can get the BootPicker with another Mac? Test if you can get the BootPicker with the keyboard with a newer Mac first.

Maybe the problem is the keyboard firmware, years ago Apple sent a firmware update for the Apple Wired Keyboard With Numeric Keys - I don't know if this  keyboard firmware update is still available. The first mid-2010 BootROM update also improved BootPicker compatibility when used connected to some ethernet connected digital sound mixers (the no DHCP network below).

I'll try to test my keyboard on a MacBook Pro 2012 I have, and I'll tell you how it'll go.

One question: can I go "back in time", reinstalling my Sapphire GPU card, Mojave and everything else?, Can this make it work again the way it was before my Radeon GPU card has made this mess? I did not install any patcher...no DOD Dude nor Opencore (I couldn't because of my BootPicker did not work).

Sure, try a clean install to an erased spare disk, so if you still have a problem, your current work disk is unmodified and you just lost an hour or two.
