Right…just paste a text-colored word into the signature. That's a nice workaround.There is an alternate way round it, create an email signature with your chosen text color. It doesn’t need to be a signature, it could just be one word and then whenever you create a new email your text color is already in the message.
If you hit select where it says Message font then on the top left there is a hamburger menu that lets you select a color for that font but it doesn't change anything
