On his YouTube camera, the sides of his head are pretty straight, but in his persona, both new and old, the center of his face is noticeable wider.
This is the perspective distortion one would expect from a close in camera with a wide angle lens. Photographers usually use a more telephoto lens like a portrait lens that forces them to move back and get a more accurate photo of a subject's face.
Vision Pro requires a person to hold it at arms length to capture one's face, but, while more convenient, that is too close and perspective distortion is stronger.
